Pepe's Chili
Ingredients:
10  pounds ground chuck
6  large onions - diced
6  green bell peppers - diced
16  ounces canned Anaheim chili peppers - diced
6  fresh jalepeno peppers - minced
1  cup mild chili powder
4  tablespoons dark chili powder
12 tablespoons dried oregano
2  teaspoons salt
1  teaspoon black pepper
1  teaspoon red pepper
1/4  cup paprika
2  #10 cans (24 cups) red kidney beans
1  #10 can (12 cups) crushed tomatoes
1  #10 can (12 cups) whole tomatoes
Directions:
Cook beef and drain fat.  Add onions and all peppers and sauté.  Add the spices and mix thoroughly.  Stir in the canned goods and cook one hour.
Makes about 15 quarts.
