Pepe's Style Chili

10 pounds ground chuck

6 large onions - diced

6 green bell peppers - diced

16 ounces canned Anaheim chili peppers - diced

6 fresh jalapeno peppers - minced

1 cup mild chili powder

4 tablespoons dark chili powder

12 tablespoons dried oregano

2 teaspoons salt

1 teaspoon black pepper

1 teaspoon red pepper

1/4 cup paprika

2 #10 cans (24 cups) red kidney beans

1 #10 can (12 cups) crushed tomatoes

1 #10 can (12 cups) whole tomatoes

 

· Cook beef and drain fat.

· Add onions and all peppers and sauté.

· Add the spices and mix thoroughly.

· Stir in the canned goods and cook one hour.

· Makes about 15 quarts.
