Chocolate Raspberry Cheesecake 6 oz. Cream Cheese 1 14oz. can sweetened condensed milk 1 egg 3 tbsp. Lemon juice or key lime juice 1tsp. Vanilla 1 cup raspberries 2 1 oz squares semi-sweet chocolate ¼ cup heavy whipping cream
Beat 6 oz cream cheese until fluffy. Beat in 1 14 oz. can sweetened condensed milk until smooth. Add 1 egg, 3 tbsp. lemon juice or key lime juice, and 1 tsp. vanilla, beat just until blended. Spread 1 cup raspberries, fresh or frozen on bottom of chocolate graham crust. Top with batter, bake in 350 degree oven 30-35 minutes or until center is almost set. Cool completely. Heat 2 1 oz. squares semisweet chocolate with ¼ cup heavy whipping cream over low heat stirring until smooth and thick. Pour over pie and chill. Makes 6 large servings or 8 more moderate sized ones. |
